Roasted Asparagus with Hollandaise Sauce

Hollandaise is a very popular topping for cooked (usually steamed) asparagus.

Here I serve it with roasted asparagus, and the combination is lovely.

RECIPE:

1 pound asparagus
1 tablespoon extra virgin olive oil
Salt and freshly ground black pepper to taste
1 recipe Hollandaise Sauce

Preheat oven to 400 degrees Fahrenheit.

Rinse the asparagus and break off the tough ends. (If you hold the asparagus spear at each end and bend it slightly, it will break at the right spot.) If using thicker spears, trim off the larger buds near the bottom of the stalk as desired.

Line up the asparagus spears in a single layer in a baking dish or pan.

Drizzle the asparagus lightly with the olive oil, turn to coat, and then sprinkle with salt and pepper to taste.

Roast for about 5-12 minutes, until the asparagus are tender when pierced with a fork, but still firm. The roasting time will depend on the thickness of the asparagus spears. For very thin asparagus, start checking them after about 4 minutes.

Meanwhile, prepare the Hollandaise Sauce.

Transfer the roasted asparagus to serving plate(s). Spoon the sauce over the asparagus, and serve.

Roasted Asparagus with Lemon and Pine Nuts

Spring is just around the corner, and asparagus is one of my favorite spring vegetables.

Here I start with our basic Roasted Asparagus and dress it up with some tangy lemon and crunchy pine nuts.

RECIPE:

2 tablespoons pine nuts
1 pound asparagus
1 tablespoon extra virgin olive oil
Salt and freshly ground black pepper to taste
1 lemon, cut into 6-8 wedges

Preheat oven to 400 degrees Fahrenheit.

Meanwhile, toast the pine nuts in a dry skillet over low to medium-low heat for few minutes until lightly golden. Remove from heat and set aside.

Rinse the asparagus and break off the tough ends. (If you hold the asparagus spear at each end and bend it slightly, it will break at the right spot.) If using thicker spears, trim off the larger buds near the bottom of the stalk as desired.

Line up the asparagus spears in a single layer in a baking dish or pan.

Drizzle the asparagus lightly with the olive oil, turn to coat, and then sprinkle with salt and pepper to taste.

Roasted Asparagus with Pine Nuts and Gruyere



I love roasted vegetables - especially asparagus. In this recipe, roasted asparagus spears are dressed up with luscious Gruyere cheese and crunchy pine nuts for an easy gourmet side dish.

RECIPE:

2 tablespoons pine nuts
1 pound fresh asparagus (medium or thick spears; not too thin)
1 tablespoon extra virgin olive oil
Salt and freshly ground black pepper
1/2 cup shredded Gruyere cheese

Preheat oven to 400 degrees Fahrenheit.

Meanwhile, toast the pine nuts in a dry skillet over low to medium-low heat for few minutes until lightly golden. Remove from heat and set aside.

Rinse the asparagus and break off the tough ends. (If you hold the asparagus spear at each end and bend it slightly, it will break at the right spot.) If using thicker spears, trim off the larger buds near the bottom of the stalk as desired.

Line up the asparagus spears in a single layer in a baking dish or roasting pan.

Drizzle the asparagus lightly with the olive oil, turn to coat, and then sprinkle with salt and pepper to taste.

Sprinkle the Gruyere down the center of the row of asparagus, distributing the cheese on the stalks but not the tips.

Roast for about 6-14 minutes, until the asparagus are tender when pierced with a fork, but still firm, and the cheese is melted and bubbly. The roasting time will depend on the thickness of the asparagus spears.

Sprinkle with the pine nuts, and serve immediately.

Roasted Asparagus and Hard-Boiled Eggs with Hollandaise Sauce

Asparagus is great with Hollandaise sauce. So are eggs (as in Eggs Benedict). Combined here, they make a fantastic brunch, lunch, or light supper entree.

RECIPE:

1 pound asparagus
1 tablespoon extra virgin olive oil
Salt and freshly ground black pepper to taste
4 Perfect Hard-Boiled Eggs, sliced
1 recipe Hollandaise Sauce
Paprika for garnish

Preheat oven to 400 degrees Fahrenheit.

Rinse the asparagus and break off the tough ends. (If you hold the asparagus spear at each end and bend it slightly, it will break at the right spot.) If using thicker spears, trim off the larger buds near the bottom of the stalk as desired.

Line up the asparagus spears in a single layer in a baking dish or pan.

Drizzle the asparagus lightly with the olive oil, turn to coat, and then sprinkle with salt and pepper to taste.

Roasted Asparagus with Wine-Glazed Mushrooms

For this recipe, I started with my popular Roasted Asparagus and topped it with my Wine-Glazed Mushrooms. The combination is tasty and elegant - perfect as a holiday side dish, or anytime!

Sometimes I serve this with Pan-Grilled Polenta Rounds for a complete meal.

RECIPE:

1 pound fresh asparagus
4 tablespoons extra virgin olive oil, divided
1 small shallot, minced
1 small clove garlic, minced
1 pound white mushrooms or wild mushrooms, or a combination, sliced
Generous pinch of dried thyme leaves
1/2 cup dry white wine
1 tablespoons chopped fresh parsley (preferably Italian flat-leaf parsley), divided
Salt and freshly ground black pepper

Preheat oven to 400 degrees Fahrenheit.

Rinse and trim the asparagus, and then line them up in a single layer in a baking dish or roasting pan.

Drizzle the asparagus with 1 tablespoon of the olive oil, turn to coat, and then sprinkle with salt and pepper.

Roast the asparagus for about 5-12 minutes, until they are tender when pierced with a fork, but still firm. The roasting time will depend on the thickness of the asparagus spears. For very thin asparagus, start checking them at about 4 minutes.

Meanwhile, heat the remaining 3 tablespoons of olive oil in a large skillet over medium to medium-low heat. Add the shallot and garlic, and saute for 1-2 minutes, until soft and fragrant. Do not let the garlic burn.

Add the mushrooms to the skillet, along with the thyme, 1/2 tablespoon of the parsley, and salt and pepper to taste. Saute until the mushrooms are cooked through and lightly golden, approximately 6-8 minutes.

Add the wine, along with additional salt and pepper as needed. Raise the heat to medium-high, and saute for a minute or two, until the liquid has evaporated.

Arrange the asparagus on serving plate(s), lining up the spears attractively. Spoon the mushrooms across the middle of the row of asparagus, sprinkle with the remaining 1/2 tablespoon of parsley, and serve.

Roasted Asparagus



Every once in a while, I meet people who tell me they don't like asparagus. Often it turns out that their only experience with asparagus was out of a can. No wonder they don't think they like asparagus!

Fresh is always best, and roasting fresh asparagus until crisp-tender will deepen its flavor and mellow it at the same time.

This is my favorite way to prepare asparagus. It's easy and pretty much foolproof.
